SMOKY GRILLED PRAWNS WITH MANGO SALSA

Serves: 4 - 6

Ingredients:

500g prawns, deveined and peeled

2 tsp smoked paprika

1 tsp ground garlic powder

Pinch of sea salt

3 tbsp olive oil

Half a lime, zest and juice

For the Salsa:

1 ripe mango, diced

Half red onion, diced

1 birds eye red chilli, sliced

Half a lime, zest and juice

Pinch of salt

Small bunch of fresh coriander, chopped

(Optional: 1 ripe avocado diced)

Method:

1- Combine the paprika, garlic, salt, olive oil and lime zest and juice in a bowl, throw in the prawns, and allow to marinate in the fridge for at least 30 minutes.

2- Place all salsa ingredients in a bowl, toss to coat.

3- Skewer the prawns, then grill on a pre-heated barbecue grill for 2-3 minutes on each side.

4- Serve prawns hot, with the mango salsa on the side.
